What is Suya?
Suya is a Nigerian spiced skewer made from thinly sliced beef (or chicken, ram, or goat) coated in a dry spice rub called yaji. The yaji spice mix typically includes ground peanuts, ginger, paprika, garlic, and a blend of other spices that vary by region and cook. The meat is skewered on thin metal or wooden sticks and grilled over open charcoal, giving it a deep, smoky char that you simply can’t replicate in an oven.
Where Does Suya Come From?
Suya has its roots in northern Nigeria, where it originated with the Hausa people as a street food staple. From there it spread across Nigeria and became a national favourite. Today, you’ll find Suya vendors at night markets, roadside stalls, and restaurants across the country — and increasingly, at Nigerian restaurants worldwide.
How is Suya Served?
Suya is typically served wrapped in newspaper or on a wooden board with sliced onions, tomatoes, and extra yaji spice on the side. The combination of hot, smoky meat with crisp raw onion and a hit of extra spice is one of those flavour contrasts that makes Nigerian street food so addictive.
