Egusi Soup: A Guide to Nigeria’s Most Beloved Comfort Food

Egusi Soup is one of the most recognised and widely eaten soups in Nigerian cuisine. Ask any Nigerian about their childhood comfort food and Egusi will almost certainly come up. But if you’ve never had it before, it can seem a little mysterious. What exactly is Egusi? How is it made? And why do Nigerians love it so much? This guide covers everything you need to know.

What is Egusi Soup?

Egusi Soup is a rich, thick Nigerian stew made from ground melon seeds (egusi), cooked in a palm oil and tomato base with leafy greens, assorted meats, and dried seafood. The ground melon seeds act as a natural thickener and protein source, giving the soup its distinctive texture and nutty, earthy flavour. It’s one of the most nutritious dishes in Nigerian cooking.

Where Does Egusi Come From?

Egusi seeds come from a gourd plant native to West and Central Africa. The seeds are dried, shelled, and ground into a flour-like powder before cooking. Different regions of Nigeria prepare Egusi Soup slightly differently — some fry the egusi before adding it to the stew, others mix it directly into the liquid. Both methods are correct; they just produce different textures.

What Goes into Egusi Soup?

A well-made Egusi Soup includes ground egusi seeds, palm oil, blended tomatoes and peppers, onions, and a combination of assorted meats (beef, tripe, cow foot), stockfish, dried fish, and crayfish. Leafy greens — most commonly bitter leaf (ewuro) or spinach — are added toward the end. The result is a deeply savoury, thick, intensely flavoured stew unlike anything else in world cuisine.

What is Egusi Soup Served With?

Egusi Soup is almost always served with a swallow — Pounded Yam, Amala, Eba, Semo, or Fufu. The neutral, doughy swallow is the perfect counterpart to Egusi’s bold flavour. A small ball of swallow is pinched off, dipped into the soup, and eaten in one bite — no cutlery required.

Is Egusi Soup Good for You?

Egusi seeds are high in protein, healthy fats, and zinc. When combined with leafy greens and lean protein, Egusi Soup is one of the more nutritionally complete dishes in West African cuisine — though it’s also undeniably rich and filling.
