Efo Riro: The Nigerian Spinach Stew You Need to Try

Efo Riro is one of the most celebrated soups in Yoruba cuisine and a staple across Nigeria. Rich, flavourful, and packed with vegetables and protein, it’s a dish that rewards patience and proves that Nigerian cooking is as sophisticated as any cuisine in the world. If you haven’t tried Efo Riro yet, here’s everything you need to know.

What is Efo Riro?

Efo Riro (pronounced eh-fo ree-ro) is a Nigerian leafy green stew originating from the Yoruba people of southwestern Nigeria. “Efo” means leafy greens in Yoruba, and “Riro” means to stir — so the name quite literally translates to “stirred greens.” The dish is made with Shoko (African spinach) or Efo Tete, cooked in a rich, peppery tomato-and-palm-oil base, loaded with assorted meats and seafood.

What Makes Efo Riro Special?

What sets Efo Riro apart from other vegetable stews is the depth of its base. The stew starts with blended tomatoes, red peppers, and scotch bonnets cooked down in palm oil with onions — creating a deeply flavoured, slightly smoky base before the greens ever touch the pot. The greens are added at the end to preserve their colour and texture, then loaded with a combination of assorted meats, stockfish, dried fish, and sometimes crayfish for an unmistakable umami punch.

What is Efo Riro Served With?

Efo Riro is traditionally served with swallow — starchy Nigerian side dishes eaten by hand. The most common pairings are Pounded Yam, Amala (black yam flour), Eba (cassava flour), or Fufu. The combination of the rich, peppery stew with the smooth, neutral swallow is one of the great food experiences in Nigerian cuisine.

Efo Riro vs Egusi Soup: What’s the Difference?

Both are popular Nigerian soups, but they’re very different. Egusi Soup is made with ground melon seeds that thicken the stew and give it a distinctively nutty, rich flavour. Efo Riro uses no thickener — it’s a lighter, more vegetable-forward stew. Many people find Efo Riro the better entry point if they’re new to Nigerian food, as the flavour profile is more immediately familiar.
